Who doesn't love pancakes? And these are quick and easy and will only take you about 20mins from start to finish! The best part is that you can top them with anything really... just before you flip! That usually makes feeding a family of very opinionated foodies a breeze!
Let's get started!
1 1/2 cups all purpose flour
1/2 cup cornmeal
3/4 cup milk
1/4 cup oil
2 tsp baking powder
Dash of vanilla essence
Pinch of salt
About 1/2 of any topping you would like.
Mix cornmeal, flour, baking power and salt in a large bowl. Make a hole in the middle of dry ingredients.
Mix egg, milk, oil, essence in your measuring cup.
Add liquid into hole in your dry ingredients and fold.
A few turns will be enough, until mostly mixed. Don't beat the living daylights out of it please.
Spray your frying pan, griddle, tawah or whatever you have with non stick spray ( or brush lightly with oil)
Pour about 1/4 to half a cup on once pan is sizzling hot. (I use a ladle)
Now get creative!
Sprinkle on your blueberries, raisins, chocolate chips, granola, marshmallows, kale, whatever you like! Flip once you see a good bit of bubbles.
And you're done!
If you wanna make banana pancakes, just mash a banana or two in your batter before frying up.
